Thyme

Thyme is sold both fresh and dried, with the fresh form offering stronger flavour but a shorter shelf life, typically lasting less than a week. Although it is a summer herb, greenhouse‑grown thyme is often available year‑round. Fresh thyme is usually sold in small bunches of sprigs, while dried thyme is widely used in Armenia—where it is known as Urc—particularly in teas. In cooking, thyme may be used as whole sprigs, as in a bouquet garni, or the leaves may be stripped from the stems and added directly to a dish. Recipes that call for a “bunch” or “sprig” refer to the whole form, while measurements in spoons indicate the use of leaves alone. Dried thyme can be substituted for fresh without difficulty, making it a versatile and convenient herb in many kitchens.
