Spinach

Spinach (Spinacia oleracea) is an edible flowering plant in the Amaranthaceae family, native to central and southwestern Asia. It is typically an annual species, occasionally biennial, growing up to 30 cm tall and capable of overwintering in temperate climates. The plant produces alternate, simple leaves that vary widely in size and shape, with larger ovate leaves at the base and smaller triangular leaves along the flowering stem. Spinach is highly regarded for its nutritional density and is especially rich in antioxidants when eaten fresh, steamed, or quickly boiled. It provides notable amounts of vitamins A, C, E, and K, along with minerals such as magnesium, manganese, iron, and calcium. It also contains folate, potassium, B‑vitamins, protein, and omega‑3 fatty acids. Recent research has identified naturally occurring opioid peptides known as rubiscolins in spinach, adding to its biochemical interest.
