Tatsoi

Tatsoi (Tat choy or Brassica narinosa or Brassica rapa) also known as spinach mustard, spoon mustard, or rosette bok choy—is an Asian leafy green grown for its tender, mild‑flavoured leaves. It has become increasingly popular in North American cooking and is now cultivated worldwide. The plant forms a dense rosette of dark green, spoon‑shaped leaves with a soft, creamy texture and a subtle but distinctive taste. Tatsoi grows quickly, reaching harvestable size in about 45–50 days, and is remarkably cold‑tolerant, surviving temperatures as low as –10 °C (15 °F). It can even be harvested from beneath snow cover, making it a reliable winter green in many climates.
