Mizuna
Mizuna is a thin, wispy salad green related to Chinese cabbage, known for its mild mustard flavour and delicate texture. Native to Japan, the plant typically grows 14 to 16 inches tall and produces green‑and‑yellow leaves that are smooth, slender, and slightly feathery in shape. Mizuna is available both as a mature green and as a baby‑leaf version, the latter being smaller, more tender, and especially suited for fresh salads. As a versatile leafy vegetable, mizuna can be steamed, boiled, or stir‑fried, though it is most commonly used raw to add a subtle peppery note to mixed salads.
