Flat Parsley
Parsley is widely used in Middle Eastern, European, and American cuisines, where it appears both as a flavouring herb and as a garnish. Curly leaf parsley is especially common as a decorative topping, while in central and eastern Europe and across western Asia, many dishes are finished with a generous sprinkle of freshly chopped flat‑leaf parsley. It is frequently added to potato dishes—whether boiled or mashed—as well as to rice preparations such as risotto or pilaf. Parsley also complements fish, fried chicken, lamb or goose, steaks, and a variety of meat and vegetable stews, including classics like beef bourguignon, goulash, and chicken paprikash. In southern and central Europe, parsley is an essential component of bouquet garni, a traditional bundle of fresh herbs used to infuse flavour into stocks, soups, and sauces.
